Cherry Almond Sheet Cake with Vanilla Mascarpone Frosting
Cherry Garcia ice cream. That is exactly what this cake tastes like. The mix of almond, cherry, and creaminess from the frosting makes for the most delicious cake that, if you add a few chocolate chips, tastes nearly identical to the famous Ben & Jerry’s flavor.
When making the frosting for this cake, I used mascarpone to add a little tang. However, it would be just as good as a fully cream-based frosting. If you choose to go this route, I would recommend doubling the amount of cream and powdered sugar and adding a splash more vanilla. This should result in a whipped topping that is equally as delicious and only requires basic ingredients.
This has to be a favorite of mine and one that I will absolutely be remaking for events (or even just myself) in the future. I hope you enjoy it as much as I do!
