Blackberry and Apricot Goat Cheese Toast

Goat Cheese Toast

Goat cheese and honey have to be two of my favorite toast toppings. When it comes to the battle of savory vs sweet breakfasts, I tend to lean towards savory, but recipes like this make me question my choice. The combination of the creamy goat cheese with the salty butter, sweet honey and swirls of apricot jam, spicy red pepper flakes, and tart raspberries makes for an incredible, well-rounded flavor that is to die for. Toasting up your bread in a pan with extra butter is also my personal favorite way of making toast - the extra crunch and salty punch the butter provides brings any toast recipe to a whole new level. Plus, this is a super simple recipe that can be accomplished in minutes. Although I love cooking a big breakfast, it’s not every morning that I feel like whipping up a full breakfast with sides and all the fixings. This recipe brings all of the best breakfast flavors together in an easy, quick meal that is sure to satisfy both sweet and salty breakfast lovers.

If you aren’t a goat cheese fan, ricotta or even cottage cheese would also be great choices for this toast. However, I am partial to goat cheese, and will almost always choose it over other dairy choices to put on toast. Plus, the other flavors in this breakfast do a great job of enhancing the best parts of the goat cheese - a little sweet, creamy, and tart. Even if you are not the biggest fan, I urge you to give this a try. Enjoy!
